How to deal with your work experience.

        I did my intership, in the Château de l'Ile in Ostwald, near Strasbourg, from 24th April to 19th August. This historic castle, is today a five star hotel, with a gastronomic restaurant, a brasserie, a bar, and a pool and spa erea. The Château de l'Ile are business and family guests during the week, and there are foreign tourists in holydays.

The number of room is 62, and the number of places in restaurants is 150 with terrace places. The average price of a room is 350€, the average price of a menu is 62,5€ without drink, and the average price of a drink in the bar is 13,5€.

        At the beginning of my work placement, from 24th April to 19th June, I worked as a cook, in cold preparations with 3 others. I was able to cook for the 2 restaurants, for weddings and seminars, for the breakfast buffet and the room service.

Every morning at 9am, I cheked the temperatures of the cold rooms. After, we drank a coffe between cooks, then we stowed the goods delivered. And every evining, I cheked aussi the temperatures of the cold rooms, before to drink a coffe with others. Then, I prepared of salami, salmon and cheese for the breakfast buffet.

After the service in the cold preparations, I had helped the baker's chef  to finish his service. I was going home at 11pm.

        Half way of my work placement, from 20th June to 19th August, I worked as a waiter in the 2 restaurants, for weddings and seminars.

My daily activities was to organize my services, set up the restaurant for the breakfast the netx day, as well as announce the number of guest per service to the chef, and order my bread from the pastry chefs. Sometimes, I worked to with the wine waiter

Weekends, at weddings and seminars, I coordinated the conduct of the evenings with the help of my tutor, the butler.

        During my days-off, I visited my parents. I cooked a lot with my mom, I went for a walk, to see my friends. I enjoy a lot of my free time !

        Now I am familiar with regional cooking in Alsace. I am wine knowleadgeable. I learned a lot of things during this work placement, as much in the way of working in the kitchen and et the room, as in myself  and my ability to integrate a lot of things.

        Later my BTS, I want to do a one year degree specializing in wine in Bordeaux or in Bourgogne. After, I would like to go in New-York to do a work placement in a intitution of Paul Bocuse, for improve my English language.

I would also like to travel in France and in abroad to discover news cultures, and products, and work there to acquire news knowledges in wine, kitchen and catering.

        Since the last year, I understood how important foreign languages are in hospitality industry.

During my work placement, we had a lot of foreign guests. For me, it was difficult to andurstand and meet the expectations of my guests.
