Au commencement une question:  “Can anyone recommend a good company that they have used to do some catering for a small reception after a funeral? We're not looking for anything elaborate, just a simple cold buffet or sandwiches for a reasonable price….” Et de nombreux hôtels en Grande Bretagne ont vu une opportunité d’élargir leur potentiel de réception. Vous trouverez en annexes quelques unes de ces propositions.

L’organisation de funérailles nécessite une réflexion sur de multiples points en temps très court :

1. Le rendez vous avec le directeur funéraire pendant lequel seront traitées les questions liées à la logistique : Où voulez-vous le service, à quelle heure, combien de voitures,  crémation ou inhumation, le pin ou en chêne, poignées chromées ou  peintes en or, quelle musique en direct ou enregistrée, combien de personnes viendront voir le corps, voulez-vous maquiller le cadavre, etc etc etc.  Vous devez donner une réponse à toutes ces questions alors que vous êtes en détresse.
2. L’organisation du service funéraire
3. Les fleurs
4. Comment les personnes invitées vont suivre le cortège ?
5. La musique pendant l’office
6. La décoration
7. L’organisation de la réception après les funérailles ET c’est ce moment qu’il est possible de confier à quelqu’un d’autre

La réception d’après service oblige une réflexion festive à laquelle nous n’avons pas envie de réfléchir sur ces moments de deuils. Les hôtels vous proposent donc plusieurs types de repas dédiés à cette occasion (voir annexes).

TRAVAIL A FAIRE

Vous tenez un hôtel dans un pays de votre choix et vous cherchez à développer votre chiffre d’affaire par une différenciation. Vous avez trouvé un nouveau marché : « les funeral tea ». Ce marché vous permettra de vous faire connaître par une cible de clients que vous ne touchez pas actuellement. Vous avez peu d’investissement car la réception de groupe vous connaissez bien. Vous avez faire du Benchmarking et avez remarqué que les précurseurs de ce type de réception se situaient en grande Bretagne.

Pour développer cette activité, en premier vous commencer par faire un diagnostic interne- externe (SWOT) de votre hôtel et du marché funéraire sur le pays choisi, puis vous détaillez votre diagnostic externe en faisant une étude de marché un plus approfondie en prenant en compte les 4 ou 7 P’s marketing.

Une fois que vous connaissez les obligations liées au pays, vous mettez en place votre stratégie de différenciation et le marketing mix opérationnel qui vous permettra de  développer cette activité.
