Gildas's Report

I did my work experience at the Carlotta . It's located in Caen in the docks . It's the best Brasserie in Caen . When I entered in the Brasserie , I could not believe my eyes ! Everything in the restaurant was luxurious , expensive and very beautiful . There are four rows were composed of eight tables at the restaurant and the bar in the middle of the restaurant

My work experience started on monday . I was very stressed . As I entered the front door , I said to the waiter that I was a student from Rabelais school who was going to do his work experience at the Carlotta . The wait said : «  I'm going to introduce you to your best friend , the broom ! »

After this introduction , Arnaud (the head cook) took me on a tour throught the kitchen . He showed me the different parts of the kitchen and he presented me the staff : There are six employees ( the head cook , the second , two apprentices , the employee do the washing up in the kitchen and one commis )

After I returned to the dining room , Pierre , a waiter had some work for me . I had to clean up the restaurant , the floor , the tables and to wipe the menu

On tuesday , I started at 10 am and I had to clean up the bar and the floor . After this , I helped Manu to empty the bar for clean up all the bar .

On wednesday and the following days I worked with Leaticia , a waitress . She tought how me to do a good service to work quickly . I also worked withe Christophe , the barman and he asked me to do many cocktails ( Americano , Blue Lagon , Rhum Florida etc..) and to do the coffee service .

My work experience at the Carlotta was good , efficient and successful . I learned a lot and how to do a service quickly like in a typical brasserie in Paris.
